Extreme Flavours and emotions: Outdoor cooking with Joseba Cruz

Catalonian chef Joseba Cruz lives about an hours drive from Barcelona in his family's village. He doesn't like to follow the rules or be inhibited by traditional ideas. What's important to him is what he can find in the beautiful countryside that surrounds him. He uses this inspiration in his cooking; Scents and smells are very important to him. They activate emotions and inspire him to create his dishes: the smell of the herbs in the forest, the cut grass, the mushrooms....

We spent a weekend with Joseba and his partner Estelle to discover exactly what he does!
